Iedereen heeft wel één grote kinderdroom. Mijn droom is mijn eigen gezellig bakwinkeltje. Met een toonbank vol roze, frivole cupcakes en taarten. En als als het even kan ook een selectie hemelse, knapperige koekjes.

A couple of days ago I came back from beautiful California and I already miss it. During the road trip I ate so many nice things at lovely places. I had homemade hamburgers, fresh fish of the day, mushroom risotto, grilled salmon, the best mokka cookie gelato, NY pizza, ... Although I would like to share all of this tasty food with you I just made a selection of delicious and fun food experiences !
Since mid-July the Pukkelpop caravan has found its way again to Kiewit, where an energetic buzz zooms through the streets and people. Day by day more stages, tents, snack bars, carousels and other pretty things rise up from nowhere to be part of another amazing Pukkelpop edition (#pkp14). As long as I can remember I have made some of my best summer memories at that big, smelly and rhythmic festival area; my first festival, chillin' with my best friends, meeting Arctic Monkeys, first time talking to my boyfriend, enjoying beautiful sunsets, listening to delicate tunes and eating the greasiest food.
A couple of weeks ago I went to the beautiful isle of Malta... Except from a lot of sunshine, beautiful beaches and lovely sunsets Malta also has to offer very tasty food! I ate delightful tuna sandwiches, yummy pizza slices, a heavenly piece of cake and one exquisite ice cream!!!"Share your favourite speculaas recipe with us!" appeared on my facebook-timeline almost a year ago. I had some free time and received nice compliments on an ice-cake with a speculaas crust I recently made. So, I shared my favourite speculaas recipe. Months passed and I totally forgot about the recipe until on an idle Tuesday I received an email from Lotus Bakeries: "Congrats, you will be part of the first Lotus Speculaas Cookbook. We would like to invite you to the official release." I was astonished. And flattered! So a couple of weeks later I was eating mini-speculaasjes and other yummy Lotus treats while listening to the charismatic CEO of Lotus Bakeries. They provided us a tour in the Lotus factory where all the magic happens! Unfortunately, I had an exam the next day and had to leave early. Still, I would like to see the magic someday! Although this took place six months ago I am still proud of my first recipe in a real cookbook! The cookbook can be found here. But you can try out the ice-cake yourself with my recipe below.
