Since I started baking (I don't remember how many years ago) I learned a couple of things. And one of these things is if you want to bake and decorate a birthday cake you need to be patient and take your time.
So, this Saturday there was one main activity on my program: baking a Malteser Cake!
Happy Easter! To celebrate a sunny Easter I made a delicious carrot pie with a yogurt topping.

Yesterday I had a cozy brunch with the entire family. My uncles, aunts, nieces, nephews and grandparents came together to celebrate my mum's birthday (again, we like to party hard!).
We gathered around the big table in the small living room of my "moeke" and "vake" to talk, laugh, drink and of course eat, and have a perfect Sunday brunch. But a brunch wouldn't be perfect if there wasn't too much food. We decided that every family had to make one or more dishes. As a result, we had a lot to choose from: eggs and bacon, buns, fruit, sandwiches, cheese, meatballs, soup, cake, pie, muesli, croissants, ... My contribution to this feast was homemade muesli and rhubarb pie!
This weekend is my mum's birthday!!! And she asked me to bake a treat for her colleagues. It was quite easy to choose a recipe, because couple of days before one of her colleagues asked me if I could one day bake something with pears as main ingredient (and he would give me freshly-plucked pears). So this was the perfect occasion to make a pie with pears! Excuse me, to make two pies with pears. Both recipes are fully explained below, check it out!!!
Every year at the 21st of June hundreds of people gather in Stonehenge to celebrate "summer solstice" or more commonly known as "midsummer". So, today the time between sunrise and sunset will be the longest of the year.
To celebrate this luminous day I decided to make little strawberry pies that remind me of long, beautiful days, because they look so colourful, fresh and bright. So, make these "lentetaartjes" or "little spring pies" and light up your day! Elise. "Share your favourite speculaas recipe with us!" appeared on my facebook-timeline almost a year ago. I had some free time and received nice compliments on an ice-cake with a speculaas crust I recently made. So, I shared my favourite speculaas recipe. Months passed and I totally forgot about the recipe until on an idle Tuesday I received an email from Lotus Bakeries: "Congrats, you will be part of the first Lotus Speculaas Cookbook. We would like to invite you to the official release." I was astonished. And flattered! So a couple of weeks later I was eating mini-speculaasjes and other yummy Lotus treats while listening to the charismatic CEO of Lotus Bakeries. They provided us a tour in the Lotus factory where all the magic happens! Unfortunately, I had an exam the next day and had to leave early. Still, I would like to see the magic someday!
